Big D, Bigger Appetite: Inside Dallas's Food Scene

For decades, eating out in Dallas meant a steakhouse, a margarita, or both. That version of the city still exists, and it's still delicious, but it's no longer the whole story. Today's Dallas is a city where a French chef can earn a Michelin star in less time than it takes some restaurants to get a liquor license, and where some of the best barbecue in Texas is served out of an industrial park.

Start at the top. In the fall of 2025, Mamani in Uptown earned a Michelin star just 48 days after opening. Chef Christophe De Lellis, who spent nearly a decade running the kitchen at Joël Robuchon in Las Vegas, cooks with confidence: Dover sole in brown butter, a veal Cordon Bleu with Robuchon's famous pommes purée. Across town in Deep Ellum, Tatsu Dallas holds the city's other star. It's a 10-seat omakase where chef Tatsuya Sekiguchi serves Edomae-style sushi with quiet precision. Getting a seat takes planning, since reservations drop on the 1st and 15th of each month.

Yet Dallas's heart has always been smoke. Pecan Lodge (pecanlodge.com) has been turning out award-winning barbecue since 2010, and the Deep Ellum line is part of the ritual. Come on a Friday and you'll learn fast that the beef ribs are gone by 1 PM. Serious pilgrims head north to Cattleack Barbeque, a Michelin Bib Gourmand pick tucked into a Farmers Branch industrial park. It's open only a few days a week and closes when the meat runs out, so check its Instagram before you make the drive.

The city's Italian scene has quietly become one of its strongest. In Bishop Arts, Lucia is the reservation locals scheme for, a Michelin Bib Gourmand honoree and James Beard nominee with house-cured salumi and handmade pasta. In Lower Greenville, Via Triozzi topped Resy's June 2026 Dallas Hit List, and Leigh Hutchinson's lasagna al forno is worth the trip alone. For a livelier Park Cities night, Il Bracco (ilbracco.com) keeps landing among the most-booked restaurants on OpenTable, thanks to its whole-leaf Caesar and house-made cacio e pepe.

In Lakewood, Một Hai Ba has been an East Dallas staple since 2013. Its seasonal menu blends local ingredients with French, Asian, and Italian influences, and regulars swear by the garlic noodles and shaking beef.

Then there are the tacos. Trompo started in owner Luis Olvera's backyard and has since moved around the city, most recently reopening in Oak Cliff's Jefferson Tower. The menu is Monterrey-style street tacos with no guac, rice, or beans, and in 2016 Bon Appétit named it one of the 50 best new restaurants in America.

And when the occasion calls for a view, Crown Block sits at the top of Reunion Tower, serving steaks and seafood with one of the best vantage points on the skyline. It's the right place to end a night, looking down at a city that has finally learned to eat as big as it builds.

Food fusion refers to the blending of different culinary styles and ingredients from various cultures. It is an artistic expression in the kitchen, allowing chefs to break free from traditional culinary boundaries and create new flavor profiles and presentations. The concept of fusion cuisine can be traced back to ancient times when trade routes introduced new ingredients to different regions. However, modern food fusion emerged in the late 20th century, coinciding with globalization and increased cross-cultural interactions.

1.2. The Evolution of Food Fusion

The evolution of food fusion can be divided into several key phases:

• Historical Influences: The early beginnings of food fusion can be seen in the Roman Empire, where the integration of various regional cuisines occurred due to trade and conquest. Similarly, the Silk Road facilitated the exchange of spices, herbs, and cooking techniques between Asia and Europe.

• Colonialism and Cultural Exchange: The age of exploration and colonialism brought ingredients and culinary practices from around the world to new territories. For instance, the introduction of spices from the East Indies to Europe led to the development of unique dishes that combined local ingredients with exotic flavors.

• Modern Fusion Cuisine: The late 20th century saw the rise of modern fusion cuisine, with chefs like Wolfgang Puck and Roy Choi pioneering the trend. Restaurants began to showcase dishes that combined Asian flavors with Western techniques, leading to the popularity of California cuisine and Asian fusion.

Food fusion challenges the notion of traditional cuisine by encouraging experimentation and creativity. It breaks down cultural and culinary barriers, allowing chefs to draw inspiration from various sources. This openness to new ideas fosters innovation in the kitchen and encourages chefs to push the boundaries of what is considered acceptable in culinary practices.

2.3. Identity and Expression

For many chefs, food fusion is a way to express their identities and backgrounds. It allows them to celebrate their heritage while incorporating influences from other cultures.
